Healthy-ish Chocolate Cake

We all love baked goodimg_8886s (well if you’re sane you do). Well what if you could make your baked goods a little heather… well at the bake sale that takes/took place on November 30 to december 1 there’s a secret vegetable. So I did to see how easy it would be to make cupcakes that have a vegetable. Personally I don’t care for zucchini but I used it and grated it extremely small then put it in a food processor. Flavour wise it tasted close to a normal chocolate cake, but I was one of the moistest cake I have ever bake it also took quite a bit longer to bake. One of the people who tried the cupcake that I made could honestly not tell there was any vegetable in it and LOVED IT!

The recipe that I used is from of my favorite baking recipe sites call allrecipes with there are thousands of different recipes but you have to read the comments because some people make mistakes when writing the recipe. Another tip that I have found is that the outside of the zucchini is cruch so either make it really fine or peel it off.

The recipe I found

  • 1/2 cup butter, softened
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1 3/4 cups white sugar
  • 2 eggs
  • 1/2 cup sour milk                                  <i didn’t have “sour milk” so i use regular milk…
  • 1/4 cup unsweetened cocoa powder
  • 1 cup semisweet chocolate chips
  • 2 cups zucchini, finely diced

The icing is one of my favorite ones it’s a chocolate ganache and it a simple recipe and so easy anyone can make it. The recipe is one part unwhipped whipcream and one part chocolate chips and melt that in 20 second stir and repeat till it’s binded and there not hard chocolate and it liquid. Once your don’t those steps put it in the fridge till it thickens and it’s best if you mix once in awhile and it should at least be in fridge for 3 hours so it does take time. The best thing is to make it the day before and leave it in the fridge overnight otherwise it will break and not be any good.

There are many thing you can do to make baked goods better and healthier, one trick is to use half of the sugar or even two thirds of the sugar called and it makes it just right and i find it brings the flavour you put in better. Make sure you try going outside of your comfort level, expand and experiment.
