This cute holiday treat is bound to get you into the holiday spirit with out feeling to bad about calories. With a touch of sweet frosting this treat is good for dinners or just a quick holiday snack.

To make these cute treats you will need strawberries. For a touch of sweetness, 24 mini chocolate chips. To make the frosting you will need 1/4 cup mascarpone cheese which will need to be at room temperature. You will also need 1/4 teaspoon pure vanilla extract and 1 cup powdered sugar.

Instructions (Frosting)

In order to make the frosting you will need a medium bowl for mixing. Using an electric hand mixer beat the mascarpone and vanilla until it is smooth. Slowly beat in the powered sugar into the mixture until it is thick and smooth. Using a spatula, take the frosting from the bowl and transfer it into a piping bag that is fitted with a star-piping tip.

For the Santa’s: Using a knife cut the leaf-ends of each strawberry to make a flat surface. Cut one half to three quarter inch pieces from the pointed end of each strawberry, these will be used as hats. Place the strawberries wide side down on a flat surface. Pipe a three quarter inch high swirl of frosting on each strawberry. Place the hats on top and pipe a small bit of frosting on the hats. Press two chocolate chips, pointed sides inward, into the swirl to make the eyes.

Before you start to pipe put the frosting in the fridge so it can harden a little and take shape. Also before you eat the treat, put them in the fridge for thrifty minutes so the icing does not melt.

I used this recipe to make something to bring to a family gathering and it was a hit. If you choose to make this for a family occasion it is a guaranteed hit, a touch of sweetness with out worrying about hundreds of calories.
